This dish is a renounced across the Asian palate. It is also one of Singapore’s celebrated breakfast food. Nestled in a typical Singapore shop house, near Little India, is one of the nations favorite bak kut teh seller: Ng Ah Sio Bak Kut Teh. However, besides their legendary bak kut teh, they have also had their fair share of bad publicity when they refused to to open beyond its usual operating hours to serve then Hong Kong Chief Executive, Donald Tsang in 2006. Nonetheless, this simple eatery is still popular among the locals and foreigners across the different social backgrounds. It was reported that they even serve Thaksin Shinawatra’s, ex-Prime Minister of Thailand, favorite bowl of bak kut teh.
So what’s so special about this dish ? I personally adore the rich garlic, peppery taste that gives the soup a spicy punch as it travels down your throat and down to your empty stomach in the morning. This is the typical flavor profile of the famous Teochew style Bak Kut Teh that goes really well with the deliciously succulent ribs and chinese doughnut/you tiao/ 油条. We also tried their side dishes: Tang-O and preserved vegetable. The preserved vegetable is a typical side order but unfortunately it was too sweet for my liking.
Despite their modern layout, you will still be able to find practices of the old-world. You can order any one of the house’s special ‘kung fu tea.’ I ordered a packet of xiao yue gan tea/ 小月甘茶 which came with a clay teapot where you can brew your tea to wash down all those impurities you have just gobbled down.
Overall, I think that if you are in search of a Teochew style bak kut teh, Ng Ah Sio may well be one of the best there is in Singapore. The place is well-lit, ventilated and clean considering the fact that they are serving street food/’hawker food.’ And the bak kut teh is a spot-on in all the right places- juicy, tender pork ribs in a rich, mouthwatering savory broth.
